ometet-artichokes

Sfouggato is a simple dish using eggs and garden vegetables. The word sfouggato derives from the same word for sponge and the dish sometimes turns out like an omelette.

Ingredients for 2 persons

artichokes for a medium pan

4-5 eggs

some olive oil

salt

pepper

Preparation

We boil the artichokes in salted water and then we drain them. We put some olive oil in a pan to heat and then we put the boiled artichokes in the pan and we turn them every few minutes until the water evaporates and to remain with the oil. We scramble the eggs and we add the pepper and the salt and we pour the mixture over the artichokes. When the eggs are done with the use of a big plate we turn it over in order to be baked also from the other side.

Tips: You can make the same recipe with cauliflower or asparagus.
